My coffee philosophy is simple, if not easy:
• First and foremost, freshness is the cornerstone of great coffee. The intoxicating aromas and flavors of roasted coffee begin dissipating the minute a batch comes out of the roaster. The sooner it gets into your cup, the better it will taste…period. Within 2-3 weeks of roasting, the best flavors of coffee are gone and replaced by bitter ones. Our coffee is roasted on order and shipped or delivered the next day.
• Coffee should be “roasted”, not “roasty”. It has taken an enormous amount of effort to get these wonderful green coffees to my roaster and I will not disrespect that effort by burning them.
